31 day challenge … day 23

Got today off to an early start by getting up and out with the ‘girls’.  The fields were very wet and muddy today i think  this is how its going to be from now till summer :-/  at least the ‘girls’ got a good run.

A quiet day, pottered doing a little housework then a bit of cooking ( made Slimming worlds Speed soup).


Today’s menu

Breakfast :  Malted shreddies

Lunch :  Cheese sandwich

Tea :  Bowl of Speed Soup (which was very filling and yummy)


Booze craving :  0/10  so looking forward to snuggling up with my hot chocolate this evening.


Recipe for Speed Soup


– 1 can mixed bean salad

– 1 can green lentils
– 2 cans chopped tomatoes

– 1 can baked beans
– 1 handful of split lentils
– 2 large leeks
– 1 large onion or 2 small – medium onions
– 4 medium carrots
– 2 parsnips
– 1 green 1 red and 1 yellow pepper
– 2 vegetable stock cubes
– salt and pepper
– mixed herbs

Chop and put all vegetables in a pan with the rest of the ingredients, cover and bring to boil then simmer until soft. When soft, either blend for a smooth thick soup or you can leave it chunky if that’s how you’d prefer it!

  • Such a simple recipe and looks SO yummy! Packed full of healthy stuff too!

    And your doggies are so cute! My dog is a princess and when the ground is wet outside she doesnt like to walk. She is such a diva lol.

    • Oh its a very yummy soup, perfectly warming and filling for this time of year.
      I love my ‘girls’ they will run for miles in the wet and muddy fields but hate going out in the back garden if its wet :-/
      what breed of dog do you have ??

      • I have a Pomeranian. She is a rescue dog, got her just over a year ago. She is a 11 pound little fur ball. The best thing to ever happen to me . I was told she is a full Pom, but i think she is a mix, maybe a huskie. She is slightly bigger ( longer) than a regular Pom and her snout is a little more elongated than a Pom.But she still is tiny to me. She is white with a creamy tan spread throughout her fur but only certain times does the tan stand out ( winter it stands out ALOT)
